Sauté chopped onion in oil, then add the ground meat. Stir until the meat changes color and is lump-free.
Season with salt, pepper, and a spoon of sweet paprika. Add enough water to cover the meat and simmer until most of the water evaporates.
Add uncooked rice to the meat mixture and mix thoroughly.
Remove the stems from the bell peppers, line them up with the openings at the top, and stuff them with the meat and rice mixture. Close each pepper with a slice of potato.
Arrange extra potato slices between the peppers.
Pour tomato juice over the peppers and add enough water to almost cover them.
Cover the pot and cook until everything is done.
