4 medium bell peppers

1 medium yellow onion
1 lb ground turkey
1 cup frozen corn
1 can black beans (15 oz)
1 cup brown rice
1 can canned roasted tomatoes (14.5 oz)
3 cloves garlic
2 cups spinach
1 cup pepper jack cheese

Preheat the oven to 350°F.

Cut the bell peppers in half lengthwise.

Remove the seeds and white membrane from the bell peppers using a paring knife.

Tap the bell peppers on the cutting board to remove any remaining seeds.

Place the bell peppers in a baking pan, cut side up.

Drizzle extra virgin olive oil inside and outside of the bell peppers and rub it in evenly.

Place the bell peppers face down in the oven and par-bake for 15 minutes.
