1/2 chopped onion
1 chopped jalapeno (seeds removed)

Preheat the oven to 375 degrees Fahrenheit.

Boil and prepare 1 medium-sized potato, then mash it with a little bit of salt and pepper.

Layer the mashed potato at the bottom of the bell pepper.

Add 1/2 chopped onion on top of the mashed potatoes.

Add 1 chopped jalapeno (seeds removed) on top of the onions.

Press the mixture down to compact it.

Add enough chopped tomatoes to cover the top and press down again.

Sprinkle a little bit of salt and pepper on top.
