40g kooni (dry baby shrimp)
30g chilli flakes
1 tbsp soy sauce
1/2 tsp salt
1 tbsp sugar
1 tbsp tomato sauce or ketchup
300g prawns
1 tsp chilli flakes
1/2 tsp salt
400g boneless chicken
1 tbsp soy sauce
1/2 tsp salt
1 tsp pepper powder
2-3 eggs
600g rice
3 tbsp soy sauce
2 tbsp sugar
2 tbsp tomato sauce/ketchup
1/4 cup oil
1 tbsp chopped ginger
1 tbsp chopped garlic
1 cup chopped carrot
1 cup chopped onion
4 green chilli
1 cup spring onion / leeks

Prepare the chilli paste by heating 1/2 cup oil in a pan and adding chopped ginger, garlic, kooni, and chilli flakes; sauté until fragrant.

Stir in soy sauce, salt, sugar, and tomato sauce/ketchup; mix well and set aside.

In a separate pan, heat 1/4 cup oil and add chopped ginger and garlic; sauté until fragrant.

Add chopped carrots, onions, and green chillies; stir-fry until tender.

Add prawns and boneless chicken; cook until the chicken is fully cooked and prawns are pink.

Add cooked rice to the pan, breaking up any clumps; stir to combine with the meat and vegetables.

Pour in soy sauce, sugar, and tomato sauce/ketchup; mix thoroughly until rice is evenly coated.

Add beaten eggs and stir until just set; mix everything together and remove from heat.

Garnish with spring onions before serving.
