Instructions

  1. 1Wash and chop the okra into small pieces.

  5. 5Stir in garlic and ginger; cook for 1-2 minutes until fragrant.
  6. 6Add diced tomatoes and bell peppers; cook until softened, about 5-7 minutes.

Ingredients

  • 2 cups cassava flour
  • 4 cups water
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder (for color)
  • 1 tbsp palm oil (optional)

Instructions

  1. 1In a large pot, bring 4 cups of water to a boil.
  2. 2Add 1/2 tsp of salt and 1/2 tsp of turmeric powder to the boiling water.
  3. 3Gradually add 2 cups of cassava flour to the boiling water, stirring continuously to avoid lumps.
  4. 4Reduce the heat to medium and continue stirring until the mixture thickens and pulls away from the sides of the pot.
  5. 5If using, add 1 tbsp of palm oil and mix well until fully incorporated.
  6. 6Once the mixture is smooth and stretchy, remove it from the heat.
  7. 7Transfer the eba to a flat surface or a bowl and shape it into a smooth ball or serve in portions.
  8. 8Allow it to cool slightly before serving.
