Today, variations exist across the Middle East, with each region adding its unique twist, making them a beloved snack or meal worldwide.

In a bowl, combine 1 tbsp yeast, 1 tbsp sugar, and 1 and 4 cups warm milk; let sit for 10 minutes until yeast proofs.
Add 1 tsp salt and 2 tbsp olive oil to the mixture.
Mix in 3 cups all-purpose flour until combined.
Knead the dough with a stand mixer or by hand until soft and smooth.
Cover the dough with a kitchen towel and let it rise in a warm place for at least 2 hours.
In a pan, heat 2 lbs of ground beef, breaking it apart as it cooks; drain excess fat.
Add 1 tsp olive oil and sauté for 2 more minutes.
Add 1 finely chopped onion and sauté for 1 minute.
Add 3 cloves of finely chopped garlic and sauté until onion is translucent.
Mix in 2 tbsp tomato paste and combine well.
Add 1 tsp paprika powder, 0.5 tsp cumin powder, 0.5 tsp turmeric powder, and 1 tsp pepper powder; adjust salt to taste.
Add 0.5 cup of water, cover, and cook for at least 5 minutes, stirring occasionally.
After 2 hours, punch down the dough and transfer it to a floured surface; divide into equal-sized balls.
Cover and let rest for 15 minutes.
Roll each ball into a small circle and add 2 tbsp filling in the center; flatten the filling and top with mozzarella cheese.
Dab water on the edges of the dough, bring the edges together at the top, and pinch to seal, forming a triangle.
Let the filled dough rest for 10 minutes before egg wash.
Mix 1 egg and 2 tbsp milk, then brush on the sides of the fatayer.
Sprinkle black and white sesame seeds on top.
Bake in a preheated oven at 350°F for 20-25 minutes or until golden brown.
