5 tablespoons pomegranate molasses
1 teaspoon grated nutmeg
3 tablespoons tomato puree
500 g lamb minced meat

Add 200 mL of hot water with 1 teaspoon of sugar and 1 sachet of yeast; mix well and cover.

In a mixing bowl, add 5 cups of bread flour and 1 teaspoon of salt; mix together.

Add 4 tablespoons of vegetable oil to the flour mixture; mix well.

Add the yeast mixture and another 200 mL of hot water; knead until smooth.

Cover the dough and let it rest for a minimum of 2 hours at room temperature.

Chop 4 tomatoes, 3 onions, and 1 red pepper; place in a food processor and mix until combined.

Add 2 teaspoons of salt, 2 heaping teaspoons of paprika, 2 heaping teaspoons of Lebanese seven spice, 5 tablespoons of pomegranate molasses, 1 teaspoon of grated nutmeg, and 3 tablespoons of tomato puree to the vegetable mixture; mix well.

Add 500 g of lamb minced meat to the mixture; combine and let it rest to absorb flavors.

After 2 hours, degas the dough and knead it again.

Portion the dough into around 3-inch balls and roll them out to about 7 inches in diameter.

Place the rolled dough on a flat pan over medium heat for 2 minutes, then flip it.

Add 1 and 1/2 tablespoons of the minced meat mixture on top of the dough and spread it out.

Optionally, lower the heat to cook slowly or place the manoush in the grill for 2 minutes to cook the meat quickly.

Squeeze some lemon juice over the finished manoush before serving.
