White beans with pesto shrimps

Rinse and drain the white beans, then set aside.

Heat olive oil in a large skillet over medium heat until shimmering.

Add minced garlic and sauté until fragrant, about 1 minute.

Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.

Stir in basil pesto and cook for another 1-2 minutes until heated through.

Add the white beans to the skillet and gently mix to combine.

Pour in vegetable broth and lemon juice, then simmer for 5 minutes.

Season with salt and black pepper to taste.

Fold in fresh spinach and cherry tomatoes, cooking until spinach wilts.

Remove from heat and garnish with grated parmesan cheese and fresh basil.

Serve warm, drizzling with additional olive oil if desired.
