Soak the beef tripe in cold water with half a lemon for 2.5 hours, changing the water twice.

Boil the tripe in water, seasoning with 2 teaspoons of salt, for about 15-20 minutes until cooked.

Once cooled, cut the tripe into long strips and set aside.
