Soak white beans overnight.
Chop up 1 pound of andouille sausage.
Dice 3 stalks of celery.
Dice half a yellow onion.
Dice a green bell pepper.
Mince 5 cloves of garlic.
In a Dutch oven, add about 2 teaspoons of olive oil.
Add the andouille sausage and brown on each side.
Add 2 tablespoons of butter; once melted, add the diced onion, celery, and bell pepper (the Trinity).
Let that cook down for about 5 minutes.
Add the minced garlic.
Add 1 pound of white beans.
Add as many smoked turkey necks as you would like.
Pour in 4 cups of chicken broth and 2 cups of water.
Add a cap of shrimping crab seasoning, garlic powder, onion powder, black pepper, cayenne pepper, and parsley.
Add 3 to 4 bay leaves and 2 sprigs of thyme.
Bring to a simmer, cover, and cook for 2 hours, stirring occasionally.
Mash some of the beans at the hour and a half mark (optional, helps make them creamier).
Remove the thyme stems and bay leaves.
