Egg Masala

2 boiled eggs
6-7 fresh curry leaves
salt to taste
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1 medium onion chopped fine
1 tsp ginger garlic paste
1 tbsp lemon juice
1 tbsp fresh coriander leaves chopped fine for garnishing
1/2 tsp pepper powder
1/4 tsp garam masala
1 tbsp Kashmiri red chilli powder
1 tbsp coriander powder

Boil the eggs and set them aside.

In a pan, heat oil and add fresh curry leaves.

Add chopped onions and sauté until golden brown.

Stir in ginger garlic paste and cook for a minute.

Add red chilli powder, turmeric powder, coriander powder, and salt to taste.

Mix well and cook for a few minutes.

Add boiled eggs to the pan and coat them with the gravy.

Sprinkle pepper powder and garam masala over the eggs.

Drizzle lemon juice and garnish with fresh coriander leaves.
