Egg Masala

8 fresh eggs
4 medium red onions
3 tomatoes
2 green chillies
4 cardamom pods
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp garam masala powder
1/2 tsp dry coriander powder
1/2 tsp cumin powder
1/2 lemon
few sprigs fresh coriander
2 tbsp ghee
salt to taste

Heat ghee in a pan.

Add chopped onions and sauté until golden brown.

Add chopped tomatoes and cook until soft.

Stir in green chillies, cardamom, turmeric powder, chilli powder, garam masala, dry coriander powder, cumin powder, and salt. Mix well.

Add the fresh eggs and cook until they are done to your liking.

Finish with a squeeze of lemon juice and garnish with fresh coriander.
