2 cups (400g) dried chickpeas
1 cup fresh coriander
1 cup fresh parsley
1 onion
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
6 cloves garlic
2 cups tahini paste
Juice of 5 large lemons
2 cups water

Soak the dried chickpeas overnight in water.

Drain and rinse the chickpeas.

In a food processor, combine the soaked chickpeas, fresh coriander, fresh parsley, onion, cumin, salt, pepper, and garlic. Process until a coarse mixture forms.

Form the mixture into small balls or patties.

Place the falafel on a non-stick baking sheet.

Bake in the oven until crispy, or alternatively, cook in a non-stick pan over medium heat until golden brown.
