1

Cook ground beef in a pan on medium high heat with oil, adding chopped onion and garlic for around 5 minutes until browned.

2

Add salt, pepper, and curry paste to the beef mixture and stir well.

3

Once the beef is cooked, transfer it to a bowl to cool and then refrigerate.

4

In a bowl, combine milk, egg, yeast, salt, and sugar, then mix well.

5

Add strong white bread flour to the mixture and knead until smooth and stretchy, about 5 minutes.

6

Place the dough in a bowl and let it ferment for around 2 hours until it doubles in size.

7

Divide the dough into four equal pieces and pre-shape them into small loaves.

8

Let the pre-shaped dough rest for 30 minutes before final shaping.

9

Shape the dough into buns and place them on a tray with non-stick paper, covering them to prevent drying out.

10

Let the buns proof until they are big, then preheat the oven to 160 degrees Celsius with a fan.

11

Brush the buns with an egg yolk and milk glaze before baking for around 25 minutes until golden brown.

12

Let the buns cool for 30 minutes before cutting them in half and spreading butter on the inside.

13

Mix eggs with salt, pepper, and spring onions, then add the cooled curry beef and mix well.

14

Toast the bun butter side down in a pan until golden, then add a quarter of the omelet mixture and press the bread into it.

15

Cook for a couple more minutes, then flip over and add grated cheese.
