Prepare the paste by crushing garlic, shallots, and red chili together until it reaches a paste consistency.

Add trasi (belachan) to the paste and mix well.

Scramble 2 eggs in a pan with 2 tablespoons of oil and set aside.

In the same pan, add more oil and fry the prepared paste on low heat until fragrant.

Add meatballs and fish balls to the pan and cook through.

Add cold, cooked long grain rice to the pan and stir well with the paste.

Add sweet soy sauce (kecap manis) to the rice and mix until the rice is evenly coated and dark brown.

Add the scrambled eggs back into the rice and adjust seasoning with salt and more sweet soy sauce if needed.

Add frozen papaya to the fried rice and stir to combine.

Plate the fried rice and garnish with fried shallots, sliced tomatoes, cucumbers, and crackers.
