Alfredo Sauce

1 pound butter
1 pound flour
2 cups milk

Turn the pan on high heat.

Add equal parts butter and flour to the pan (1 pound of each).

Melt the butter until bubbling.

Slowly add the flour to the melted butter, stirring continuously to achieve a wet sand consistency.

Lower the heat to medium to prevent burning the flour.

Cook the roux for about 3 minutes while stirring constantly.

Slowly temper in cold milk to the hot roux while stirring continuously to avoid lumps.

Once all the milk is added, return to heat and let it simmer for 30 minutes without boiling.

If the sauce is too thick, add a little water to reach a saucy consistency.

After 15 minutes of simmering, continue stirring and checking the consistency, adding more water if needed.

At about 20 minutes in, add Parmesan cheese, sour cream, and white pepper to the sauce.

Taste the sauce and add salt if necessary, along with more Parmesan if desired.

Continue stirring until everything is melted and well combined.

After 30 minutes, the sauce should have a nice thick consistency.
