1 cup grated Parmigiano-Reggiano cheese

Bring a large pot of water to a boil.

Add a good bit of salt to the boiling water.

Cook the fettuccine pasta according to package instructions until al dente, usually 3 to 8 minutes.

Reserve some of the pasta water before draining the pasta.

Cut a cold stick of butter into smaller chunks for quicker melting.

In a pan, combine the butter and about 3/4 cup of reserved pasta water, and bring to a simmer.

Add the cooked fettuccine pasta to the butter and pasta water mixture.

Grate a wedge of parmigiano-reggiano cheese and sprinkle it over the pasta.

Toss the pasta with two spoons, forks, or tongs to incorporate the butter, cheese, and starchy water until creamy.

Remove from heat and serve immediately, adding more parmesan cheese or cracked pepper if desired.
