2 cups flour

Create a well in the flour.

Add black pepper and turmeric to the flour and mix.

Add chopped seasonings (spring onions, onion, seasoning peppers) to the flour mixture.

Add shredded saltfish and combine with the flour mixture.

Gradually add water to the mixture, mixing until the desired consistency is reached.

Check the batter for salt and add 1 teaspoon of salt, mixing it in.

Heat about 1 to 1.5 cups of oil in a frying pan on medium heat.

Test the oil temperature with a little bit of batter, then add the batter to the hot oil, forming fritters.

Fry about 7 fritters at a time, ensuring not to overcrowd the pan.

Cook until golden brown on one side, then flip and cook for another 2 minutes.

Remove the fritters one by one and drain on paper towels.

For the second batch, mix in scotch bonnet pepper into the remaining batter before frying.
