In a large bowl, combine 1 and 3/4 cups of all-purpose flour with chopped onion, garlic, sweet pepper, hot pepper, scallions, thyme, parsley, and spices (oregano, baking powder, magi cube, black pepper, curry powder).
Mix the dry ingredients thoroughly before adding water.
Gradually add 1 and 1/4 cups of water, adjusting as necessary for consistency.
Once the batter reaches the desired consistency, prepare to fry.
Heat oil until hot enough to fry without soaking up too much oil, but not too hot to burn the acra.
Scoop spoonfuls of batter and carefully drop into the hot oil.
Fry for about 2 and 1/2 to 3 minutes, flipping halfway through until golden brown and crispy on the edges.
Remove the acra from the oil and drain on paper towels.
