1 tablespoon Dominican oregano
1 teaspoon black pepper
1 tablespoon garlic paste
1 tablespoon soy sauce
2 tablespoons lime juice
1 teaspoon allspice
2 cups water
2 tablespoons olive oil
1 large onion, chopped
1 bell pepper, chopped
2 tablespoons tomato paste
1/4 cup chopped cilantro

Trim excess fat from the oxtail and rinse it well.

Season the oxtail with chicken bouillon powder, Dominican oregano, black pepper, garlic paste, soy sauce, and lime juice. Mix everything together.

If not cooking immediately, cover the seasoned oxtail with plastic wrap and refrigerate until ready to cook.

In the pressure cooker, heat some oil until hot.

Brown the oxtail in the hot oil for about 5 minutes until it develops color.

Add allspice to the oxtail and stir everything together (optional).

Add water to the pressure cooker, then secure the lid and bring the mixture to a boil. The pressure cooker will start making a sound when it reaches boiling point.

Set a timer for 20 minutes once boiling. After 20 minutes, release the pressure from the cooker before opening it to avoid danger.

Once the pressure is released, open the cooker and reserve the cooking liquid.

In the pressure cooker, make a well in the center, add a little oil, and sauté onions and peppers for 2-3 minutes until softened.
