Preheat the oven to 375°F (190°C).
Slice the ripe plantains in half lengthwise and scoop out some flesh to create a canoe shape.
Heat olive oil in a skillet over medium heat and sauté onion, garlic, and bell pepper until softened, about 5 minutes.
Add ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 7-10 minutes.
Stir in diced tomatoes, cumin, oregano, salt, and black pepper; cook for another 5 minutes.
Remove from heat and mix in chopped cilantro and lime juice.
Fill each plantain canoe with the beef mixture and top with cheese.
Place the stuffed plantains on a baking sheet and bake for 20-25 minutes until heated through and cheese is melted.
Garnish with additional cilantro and lime wedges before serving.
