Traditionally enjoyed as a snack or appetizer, these fritters are often served during festivities and family gatherings. Today, variations can be found throughout the Caribbean, each adding local ingredients and flavors, making it a beloved dish across the region.

Boil and finely mince the saltfish.
Prepare finely chopped onion, garlic, pimento peppers, fresh thyme, scallions, and hot peppers.
In a mixing bowl, add 2 cups of all-purpose flour, a bit of salt, baking powder, yeast, and sugar.
Mix the dry ingredients together.
Add the minced saltfish and chopped aromatics to the bowl and mix until combined.
Gradually add warm water to the mixture, ensuring the batter is not too runny or too thick.
Cover the batter and let it rest for about 10 minutes.
Preheat oil in a pot for frying.
Using a small spoon or scoop, drop the batter into the preheated oil, ensuring the oil is not too hot.
Fry the fritters for about 2-3 minutes until they float and are golden brown.
Remove the fritters and drain on paper towels.
