Soak dry black-eyed peas for 24 hours in three times more water than the volume of peas.

Using a mixer with whisk attachment, whip the batter on high speed for about 5 minutes until it doubles in volume and becomes a stable foam.

In a deep fryer, heat the oil to 350F. Spoon or pipe whipped batter into it and fry for about a minute on each side until golden brown and crispy outside.
