Olper’s cream ½ Cup
Hari mirch (Green chilli) paste 2 tbs
Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
Kacha papita paste (Raw papaya paste) 1 tbs
Safed mirch powder (White pepper powder) 1 tsp
Chicken powder 1 tbs
Kali mirch (Black pepper) crushed 1 tsp
Himalayan pink salt 1& ½ tsp or to taste
Elaichi powder (Cardamom powder) ½ tsp
Khopra (Desiccated coconut) 1 & ½ tbs
Lemon juice 3 tbs
Cornflour 2 tbs
Boneless chicken cubes thighs 400g & fillet 600g
Ghee (Clarified butter) melted 1 & ½ tbs

In a bowl, add cream, green chilli paste, ginger garlic paste, raw papaya paste, white pepper powder, chicken powder, black pepper crushed, pink salt, cardamom powder, desiccated coconut, lemon juice & mix well.

Add cornflour & mix well.

Add chicken & mix well.

Add clarified butter & mix well, cover with cling film & marinate for 30 minutes.

Thread chicken pieces on metal skewer (makes 5 skewers).

Put skewers on (burning charcoal) BBQ grill and grill from all sides until done & brush oil in between.

Serve with salad & chutney.
