1

Cut 1 kg boneless chicken into small cubes.

2

Wash the chicken thoroughly.

3

Add 1 tablespoon chili flakes, 3 tablespoons ginger-garlic-green chili paste, 1 tablespoon crushed coriander, 1 teaspoon white pepper powder, 1 tablespoon salt, 1/2 tablespoon garam masala, and optional 1 teaspoon China salt to the chicken.

4

Mix the chicken with the spices thoroughly.

5

Let the chicken marinate for 15-20 minutes.

6

In a large pan, heat 4-5 tablespoons of ghee over medium-high heat.

7

Add the marinated chicken to the pan and cook for 4-5 minutes until the color changes and the chicken releases water.

8

Cover the pan and cook on low heat for 10 minutes to tenderize the chicken.

9

Remove the lid and increase the heat to evaporate the water for another 4-5 minutes until the chicken is dry.

10

Add a small pack of cream to the chicken and mix well, cooking for an additional 2-3 minutes.

11

Use coal to infuse flavor by placing it in the center of the pan and adding a few drops of cooking oil over it, covering for 2-3 minutes.

12

Transfer the filling to a tray and let it cool for 15-20 minutes.

13

Prepare a batter with flour and water to seal the rolls.

14

Fill the samosa sheets with the chicken mixture and seal them properly.

15

Heat ghee in a pan over medium-low heat and fry the rolls until golden brown, about 4-5 minutes.
