900g cassava
50g sugar
250ml coconut milk
100ml evaporated milk
yellow food colouring
7-8 tbsp sugar for caramel

Grate cassava and drain excess liquid.

Combine grated cassava, sugar, and coconut milk in a mixing bowl.

Mix until well combined and smooth.

Add yellow food colouring and mix again until incorporated.

Grease a steaming pan or mold with oil.

Pour the cassava mixture into the prepared pan.

Prepare caramel using sugar and pour over the mixture if desired.

Fill a steamer with water and bring to a boil over medium heat.

Place the pan in the steamer and cover tightly.

Steam for 45-60 minutes, or until a toothpick inserted comes out clean.
