Peanut Chikki

Originating from various regions of India, it is made with roasted peanuts and jaggery, celebrating the harvest season. This delightful treat is not only a popular snack but also a symbol of togetherness during celebrations. Today, variations exist globally, with many adapting the recipe to include different nuts and sweeteners.

Honey provides natural sweetness, while brown sugar is more affordable.

Crush the peanuts using a cloth or a blender, keeping them in larger pieces.
Preheat a frying pan and roast the peanuts on medium heat for 3-4 minutes until golden brown.
Remove the roasted peanuts and set aside.
In the same pan, melt approximately 1 cup of sugar on low flame, stirring gently to avoid burning.
If using jaggery instead of sugar, melt it in the same way.
Once melted, add the roasted peanuts to the melted sugar or jaggery and mix well.
Grease a plate or container with oil to prevent sticking.
Pour the hot mixture onto the greased surface and spread it out evenly using a greased rolling pin.
Allow it to cool slightly before cutting into pieces.
