1

Add 1 tbsp oil to a white pan and heat it.

2

Add 1 medium-sized onion, finely chopped, and sauté until translucent.

3

Add 2 finely chopped green chilies and 1 piece of finely chopped ginger, and sauté.

4

Add 1/4 tsp turmeric powder, 1 tsp Kashmiri red chili powder, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala powder, and 1 tsp salt, and mix well.

5

Add 4 large boiled and peeled potatoes to the pan and mash them with the onion masala.

6

Optionally, add 1 1/2 tsp chaat masala powder for extra flavor and mix.

7

Add a handful of chopped coriander leaves and mix well, then turn off the stove and keep the masala aside.

8

Take 2 large bread slices, remove the edges, and spread a generous amount of the potato filling on one slice.

9

Close the sandwich gently, press it, and cut it diagonally. Repeat for all sandwiches.

10

In a large bowl, add 1 cup gram flour (besan), 1/2 tsp chili powder, 1/4 tsp turmeric powder, and 1/2 tsp salt, and mix.

11

Gradually pour water into the mixture to make a smooth batter, using a whisk to avoid lumps.

12

Add a pinch of baking soda or baking powder to the batter and mix well.

13

Gently dip the sandwiches into the batter, ensuring they are coated on all sides, then let the excess batter drip off.

14

Pour enough oil into a deep pan for frying and heat it until hot.

15

Gently drop the coated sandwiches into the hot oil; they should float immediately.

16

Pour a little oil over the sandwiches while cooking, then flip them to cook on the other side.

17

Once both sides are golden brown, remove the pakoras from the oil and drain on paper towels.

18

Serve hot with ketchup or any dip of your choice.
