1 brown onion
1 tablespoon oil
2 tins sardines in tomato sauce
1/2 teaspoon sugar
3 tablespoons water
butter
fresh coriander
black pepper

Slice one brown onion.

In a small saucepan, heat 1 tablespoon of oil and sauté the onion with a pinch of salt until fragrant and lightly brown.

Add 2 tins of sardines in tomato sauce, 1/2 teaspoon of sugar, and 3 tablespoons of water to the saucepan.

Bring the mixture to a boil and allow it to simmer for 2 minutes.

Just before removing from heat, add a generous crack of black pepper.

Cut open a Vietnamese roll straight down the middle.

Spread butter on the inside of the roll.

Spoon in the sardines along with the sauce and onions.

Garnish with fresh coriander and a healthy pinch of black pepper.

Serve immediately to avoid the bread becoming soggy.
