Kunafa Chocolate

Add 1/4 cup pistachios to a grinder jar.

Melt 2 tbsp butter, let it cool, then add to the grinder jar.

Grind the pistachios and butter until smooth.

Add 1/4 cup dairy cream to the grinder jar and grind again until smooth.

Chop 1/2 cup white chocolate roughly.

In a pan over low heat, add chopped white chocolate and melt it.

Once the chocolate starts to melt, switch off the flame and add 1 tbsp oil, mixing well until fully melted.

Add green gel food color to the melted chocolate and mix.

Add the chocolate mixture to the grinder jar along with some of the pistachio cream (1-2 tsp) and grind again until smooth.

Transfer the pistachio cream to a bowl.

Splash the reserved white chocolate into a basic chocolate mold using a fork to create a design.

Chop 100g dark chocolate roughly.

Boil water in a saucepan and place a heatproof bowl on top.

Add the chopped dark chocolate to the bowl and melt it using the steam from the boiling water.

Once melted, temper the chocolate by mixing with a spatula for 1 minute.

Add the tempered chocolate to the mold, using less chocolate and more filling.

Spread the chocolate in the mold with a brush and tap it 2-3 times to settle it.

Freeze the mold for 15 minutes.

Chop the kunafa dough into smaller pieces.

In a pan, melt 2 tbsp butter and add the chopped kunafa dough.

Mix to roast the kunafa dough in the butter until well roasted.

Transfer the roasted kunafa dough to a bowl and add the pistachio cream, mixing well.

Spread the kunafa filling evenly in the mold.

Top with melted dark chocolate, spreading it well.

Tap the mold again and freeze for another 15 minutes.
