Originating from the Levant region, Kunafa is a beloved dessert often enjoyed during Ramadan and special occasions. Traditionally made with thin noodle-like pastry, it showcases the art of layering and sweetening with syrup. 1

Melt 400 grams of dark or milk chocolate in a microwave in 30-second intervals, stirring in between, or use a double boiler for a smoother melt.

2

Melt 50 grams of white chocolate separately.

3

Take out 1.5 tablespoons of melted white chocolate, add a few drops of orange food coloring, and mix well.

4

Drizzle the white and orange chocolate into the bottom of your molds or onto parchment paper, creating abstract patterns with a small spoon.

5

Refrigerate the chocolate designs for 10 minutes until set.

6

Use a sphere ice cube mold to create a fun look for the chocolate.

7

Apply a similar white and orange chocolate layer at the bottom of the sphere ice cube mold and chill for 10 minutes.

8

Pour a thin layer of melted dark chocolate over the design in the molds, spreading it evenly with a brush and coating the sides well.

9

Chill the molds for 15 minutes, or until the chocolate is firm.

10

Chop 140 grams of kataifi into 1-inch pieces.

11

Heat 3 tablespoons of butter in a pan over medium heat until melted.

12

Add the chopped kataifi to the melted butter and toast for 7–8 minutes, stirring constantly until golden brown and crispy, being careful not to burn it.

13

Transfer the toasted kataifi to a bowl and add ¾ cup pistachio paste and ¼ cup tahini, mixing until well combined.

14

Let the filling cool before assembling.

15

Once the first chocolate layer has set, spread the pistachio-kunafa filling evenly over it, pressing down gently with a spoon or pestle.

16

Chill the filled molds again for 15 minutes, ensuring it fully covers the edges.

17

Pour melted dark chocolate over the kataifi layer, spreading it evenly.

18

Refrigerate for at least 1 hour, or until the chocolate is completely hardened.

19

Carefully remove the chocolate bars from the molds.
