Instructions

  1. 1Boil milk in a heavy-bottomed pan over medium heat, stirring continuously until it reduces by half.
  2. 2Add sugar to the reduced milk and stir until fully dissolved.
  3. 3Incorporate ghee into the mixture and continue stirring for 5-7 minutes.
  4. 4Add cardamom powder and mix well to combine.
  5. 5Stir in finely chopped pistachios and almonds, reserving some for garnish.
  6. 6Add saffron strands soaked in a tablespoon of warm milk and mix thoroughly.
  7. 7Cook the mixture until it thickens and starts to leave the sides of the pan, about 10-15 minutes.
  8. 8Grease a tray with ghee and pour the mixture into it, spreading evenly.
  9. 9Sprinkle reserved nuts on top and gently press them in.
  10. 10Allow the barfi to cool at room temperature until set, about 1-2 hours.
  11. 11Cut into squares or diamonds and serve.

Ingredients

  • 2 cups pistachios, shelled and unsalted
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 cup ghee (clarified butter)
  • 1/2 tsp cardamom powder
  • 1/4 cup milk
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. 1Soak the pistachios in water for 2 hours, then drain and grind them into a coarse paste.
  2. 2In a pan, combine sugar and water, and bring to a boil over medium heat until the sugar dissolves completely.
  3. 3Add the ghee to the sugar syrup and mix well.
  4. 4Stir in the pistachio paste and cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan.
  5. 5Add the cardamom powder and milk, and mix well until fully incorporated.
  6. 6Continue to cook for another 5-7 minutes until the mixture is thick enough to form a ball.
  7. 7Grease a flat plate or tray with ghee and pour the mixture onto it, spreading it evenly.
  8. 8Allow it to cool for about 30 minutes, then cut into squares or diamond shapes.
  9. 9Garnish with chopped pistachios on top before serving.

  5. 5Cook the mixture until it starts to leave the sides of the pan, about 10-15 minutes.
  6. 6If using, add rose essence and mix well.
  7. 7Remove from heat and let it cool slightly.
  8. 8Grease a plate or tray with ghee and pour the mixture onto it, spreading it evenly.
  9. 9Sprinkle chopped nuts and grated coconut on top, pressing them gently into the mixture.
  10. 10Allow it to cool completely and set for at least 2 hours before cutting into squares.
