Boil milk in a heavy-bottomed pan over medium heat until it reduces by half, stirring frequently.
Add sugar to the reduced milk and mix well until dissolved completely.
Stir in ghee and continue cooking until the mixture thickens, about 10-15 minutes.
Add cardamom, saffron, and rose water, mixing thoroughly.
In a separate bowl, dissolve cornstarch in a little water to make a slurry.
Add the cornstarch slurry to the thickened milk mixture and stir continuously until it becomes a smooth dough.
Grease a flat tray with ghee and pour the mixture onto it, spreading evenly.
Sprinkle chopped nuts (almonds, cashews, pistachios) on top and press gently to adhere.
Allow the barfi to cool at room temperature until set, about 1-2 hours.
Cut into squares or diamond shapes for serving.
