Beet Green Pesto with Goat Cheese

4 to 6 cups tightly packed beet greens
1/3 cup Parmesan cheese
3 to 5 cloves garlic
1/2 teaspoon Redmond sea salt
1/2 cup walnuts
1/2 cup extra virgin olive oil
zest and juice of 1 lemon

Start with 4 to 6 cups of tightly packed beet greens.

Pulse the beet greens in a food processor to break them down a bit.

Add the zest and juice of 1 lemon to the beet greens in the food processor.

Add 1/3 cup of Parmesan cheese to the mixture.

Add 3 cloves of garlic (smashed) to the food processor.

Add about 1/2 teaspoon of Redmond sea salt, taste, and adjust if necessary.

Add about 1/2 cup of walnuts (or more) to the mixture.

With the food processor running, slowly add 1/2 cup of extra virgin olive oil until the desired consistency is reached.

Taste the pesto and adjust seasoning if needed.
