Ingredients

  • 200g goat cheese
  • 100g cream cheese
  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries, chopped
  • 1 tbsp olive oil

Instructions

  1. 1In a mixing bowl, combine goat cheese and cream cheese until smooth.
  2. 2Add chopped chives, parsley, lemon juice, garlic powder, black pepper, and salt to the cheese mixture. Mix well until all ingredients are incorporated.
  3. 3Lay a piece of plastic wrap on a flat surface. Spoon the cheese mixture onto the center of the wrap.
  4. 4Using the plastic wrap, shape the cheese mixture into a log, rolling it tightly. Twist the ends of the wrap to secure.
  5. 5Refrigerate the log for at least 2 hours or until firm.
  6. 6Once firm, remove the log from the plastic wrap and roll it in chopped walnuts and dried cranberries until evenly coated.
  7. 7Drizzle olive oil over the cheese roll before serving.
  8. 8Slice into rounds and serve with crackers or bread.
