Swedish Meatball Bake

Preheat the oven.
In a mixer bowl, combine ground pork, ground beef, breadcrumbs, minced onion, chopped parsley, egg, nutmeg, and a splash of milk.
Mix until blended but do not overmix.
Scoop and roll the mixture into meatballs and place them in a pan.
In a saucepan, melt butter and whisk in flour to make a roux for about 20-30 seconds until nutty.
Add half of the beef and mushroom stock to the roux and whisk until thickened.
Add freeze-dried mushrooms to the sauce and simmer.
Add remaining stock, black pepper, and nutmeg to the sauce and continue stirring.
Stir in heavy cream and adjust seasoning with salt.
Pour the sauce over the meatballs in the pan.
Bake in the oven for 30 to 45 minutes until bubbly and meatballs are cooked through.
