Falafel with Hummus Dip
Cultural Context
Falafel, originating from the Levant region, is a beloved street food made from ground chickpeas and spices, often served with hummus. It's a staple in Middle Eastern cuisine, reflecting the region's agricultural bounty. Traditionally enjoyed in pita bread or on its own, falafel has gained global popularity, with variations appearing in many countries, making it a symbol of Middle Eastern culinary heritage.

Caraway seeds provide a similar flavor profile.
Soak dried chickpeas in water for 24 hours.
After 24 hours, drain and rinse the soaked chickpeas.
In a food processor, add an onion cut into four pieces, fresh garlic, rinsed flat leaf Italian parsley, and some mint leaves or coriander.
Add ground cumin, ground coriander, salt, black pepper, and a pinch of cayenne pepper to the food processor.
Blend the herbs and spices first for better mixing.
Add the soaked chickpeas to the blended herbs and spices.
Add two heaping teaspoons of baking powder to the mixture.
Pulse until you reach a coarse texture, scraping down the sides of the food processor as needed.
Shape the falafel mixture using an ice cream scooper, wetting it with water before scooping.
Press the mixture together gently, then flatten slightly for even cooking.
Place the shaped falafel on a baking tray lined with parchment paper.
If the mixture crumbles, stir in a little flour or chickpea flour.
Alternatively, shape the falafel by hand, wetting your hands to prevent sticking.
Optionally, sprinkle the falafel with sesame seeds and press them down to stick.
Cook the falafel in one of three ways:
1. Air fry at 400°F (200°C) for 12 to 15 minutes until golden brown, brushing the air fryer with olive oil.
2. Bake in the oven at 350°F (180°C) for about 30 minutes, noting they won't be as crunchy.
3. Deep fry in oil heated to 340°F (170°C) for about 3.5 to 4 minutes until golden brown, frying three or four at a time.
Serve the falafel on a small platter with hummus, drizzled with extra virgin olive oil, chopped parsley, and tahini sauce, finishing with a pinch of sumac.
