Semolina Fufu

Cultural Context

Semolina fufu is a staple dish in Ghana, often enjoyed with rich soups and stews. Traditionally made from cassava or plantains, semolina is a modern adaptation that offers a unique texture. Fufu is central to communal dining, symbolizing togetherness and sharing. Today, variations exist across West Africa, with each region adding its own twist to the dish.

1

Place 12 cups of water on heat and allow it to boil.

2

Once the water boils, gradually pour in 800 grams of semolina flour using your left hand while whisking with your right hand.

3

Continue to pour the flour gradually to avoid tough and lumpy fufu.

4

Remove from heat once the consistency changes and it starts splashing, then continue mixing off heat until desired texture is achieved.

5

Switch from whisk to a wooden spoon to knead the fufu for a smooth appearance.

6

Return the pot to heat and knead the fufu gradually, adding more flour if needed, but only a little at a time.

7

Cook for at least 2 minutes on low heat, then combine again.

8

After 2 minutes, leave it to cook for another 3 to 5 minutes until the fufu is soft, smooth, and without lumps.

9

Transfer the fufu to cling film to shape it smoothly and set aside until ready to eat.

10

Format the fufu into lumps of your choice and pair with any soup of your choice.
