Bahama Breeze Beef Empanadas

These beef empanadas are popular for gatherings and celebrations, embodying the spirit of sharing and community. Today, variations abound globally, with many regions adopting their own fillings and dough recipes.

Wash the potato thoroughly to remove dirt.
Peel the potato and wash it again.
Cut the potato into very small pieces on a cutting board.
Put the potato pieces in a pot with 1 teaspoon of salt and boil them.
Chop up the pre-chopped carrots into smaller pieces.
Chop bell peppers and onions.
Add 1 tablespoon of curry powder, 1 tablespoon of ground, 1 teaspoon of paprika, and 1 teaspoon of cayenne pepper to a bowl.
In a large pot, add 1.56 pounds of ground beef.
Add 1 teaspoon of lemon juice and 1 teaspoon of vinegar to the ground beef (optional).
Use a masher to break apart the ground beef into smaller pieces.
Add the chopped bell peppers, onions, and carrots to the ground beef and mix well.
Add the boiled potato pieces (not fully cooked) to the mixture and combine everything together.
Add the seasoning mixture from earlier and mix well.
Pour in 1 cup of chicken broth to keep the filling moist and flavorful.
Remove the mixture from heat and transfer it to a separate container to cool.
Use store-bought empanada dough discs from the frozen section.
Place some meat filling in the center of each dough disc, adding more if desired.
Fold the dough over and use a fork to crimp the edges, sealing them tightly.
Heat oil in a deep pan to a temperature of about 8 on the stove.
Fry the empanadas in the hot oil until golden brown.
While the empanadas are frying, prepare a cream cheese jalapeno dip by chopping jalapenos, tomatoes, parsley, and cilantro.
In a bowl, mix room temperature cream cheese with chopped onions (microwaved for 20 seconds), 1/4 teaspoon of paprika, and 1/4 teaspoon of salt until well combined.
