Start with just over 1 kg of goat meat on the bone.
Season the goat meat with salt and drizzle with chili number five pizza pizazz oil.
Grill the goat meat until super caramelized and juices are sealed in, then remove from the heat.
In the same pan, add more chili number five oil, then add chopped peppers and onions; sweat them down.
Add a big thumb of chopped ginger and 2 spoons of garlic to the pan.
Incorporate carrots, 1 teaspoon of smoked paprika, 1 teaspoon of pimento, and 1 teaspoon of turmeric into the veggies.
Add 1 cup of star anise and 500 grams of fresh chopped tomatoes to the pan, mixing to lift the caramelization from the bottom.
Return the goat meat to the pan, mixing it with the vegetables.
Pour in 2 tins of coconut milk and half a bottle of jamaican jerk sauce.
Add 2 whole scotch bonnet chilis and a whole sprig of thyme to the mixture.
Cover the pan and cook on low heat for about 4 hours, allowing it to cook slowly.
Once cooked, mix in the natural fat that comes out of the goat for flavor.
Check the tenderness of the meat; it should fall apart easily.
Serve the curry goat with classic rice and peas, garnished with coriander and a squeeze of lime.
