1

Welcome to the kitchen and introduce the dish as oven grilled fish.

2

Show the large snapper and mention that any fish can be used but red snapper is preferred.

3

Prepare the green seasoning by combining 2 teaspoons of olive oil, 1 teaspoon of hot cayenne pepper, 2 teaspoons of paprika, 1 teaspoon of garlic pepper powder, and 2 teaspoons of seasoning salt in a bowl.

4

Mix the green seasoning until well combined and mention that garlic pepper powder is a mix of black pepper, garlic powder, and herbs.

5

Add 2 teaspoons of lemon juice to the green seasoning and mix again.

6

Clean the fish with lemon juice and place lemon wedges on both sides of the fish.

7

Season the fish with the prepared marinade, ensuring to get it inside the fish and on both sides.

8

Stuff the inside of the fish with 3 cloves of garlic, green onion, and fresh thyme.

9

Preheat the oven to 450°F (232°C).

10

Place the fish on a grill with a pan underneath to catch drippings, using toothpicks to seal the belly of the fish.

11

Brush the fish with additional olive oil to keep it crispy.

12

Put the fish in the oven to cook, flipping it halfway through for even crispiness.

13

After cooking, take the fish out, flip it over, and prepare the leftover seasoning by frying it in a small pan with more oil for about 2-3 minutes to avoid raw seasoning.

14

Brush the cooked seasoning mixture over the fish before serving.
