Make a marinade with cumin, coriander, fennel, chili powder, salt, black pepper, rice wine vinegar, olive oil, lemon juice, cilantro, and scallion in a small blender.

Prepare the red snapper by trimming the fins and making diagonal slashes on both sides of the fish to help absorb the marinade.

Season the fish inside and out with salt and black pepper.

Slather the marinade all over the fish, including inside the slashes and cavity.

Marinate the fish for about 30 minutes.

Prep the aromatic vegetables: cut half a red onion, some garlic, bell peppers, and vine ripe tomatoes for the bottom of the pan.

Heat oil in a pan and lightly sear the fish for a couple of minutes to get some color.

Remove the fish and sauté the prepared vegetables with salt and black pepper until slightly softened.

Place the softened vegetables in a baking pan and lay the fish on top.

Brush a little marinade on top of the fish and fill the cavity with lemon, cilantro, and fennel.

Add ginger and garlic on top of the fish and arrange the vine ripe tomatoes around it.

Drizzle olive oil over the fish and vegetables.

Bake in a preheated oven at 425°F for about 20-25 minutes until done.
