Today, Hutspot is a beloved comfort food in the Netherlands, often enjoyed during colder seasons and served with stewed meats. Variations exist, with some incorporating different vegetables or spices, reflecting local preferences and seasonal availability.

Grate 500 grams of carrots and 500 grams of onions using a Cuisinart food processor.
Add the grated carrots and onions to the insert of an Instant Pot.
Add 1000 grams of russet potatoes, salt, and black pepper to the pot.
Pour in 1 cup of water.
Seal the Instant Pot and cook on high pressure for 12 minutes.
Perform a quick release by moving the vent from sealing to venting after cooking is complete.
Open the lid and pour off any remaining water from the pot.
Mash the mixture with a pad of butter, adding more water if it seems dry.
Taste and adjust seasoning with additional salt and pepper as needed.
Use a spatula to stir the mixture gently after mashing.
Plate the hutspot traditionally with a divot for sauce and meatballs.
