Blue crab is more readily available and affordable.
Clean the black crabs thoroughly under running water.
Break the crabs into halves, removing the gills and any inedible parts.
Heat oil in a large pan over medium heat until shimmering.
Add mustard seeds and let them crackle for a few seconds.
Stir in chopped onions and sauté until golden brown, about 5-7 minutes.
Add minced garlic, ginger, and green chilies; sauté until fragrant, about 2 minutes.
Add chopped tomatoes and cook until they soften, about 5 minutes.
Stir in turmeric, coriander powder, cumin powder, and red chili powder; cook for 2 minutes.
Add the cleaned crab pieces to the pan and mix well with the spices.
Pour in coconut milk and add curry leaves; bring to a simmer.
Cover and cook for 15-20 minutes, stirring occasionally, until the crab is cooked through.
Season with salt and adjust spices to taste.
Remove from heat and stir in fresh cilantro and lemon juice before serving.
