1 teaspoon baking powder
2 tablespoons sesame seeds (optional)

Soak dried chickpeas overnight in water with 1/2 teaspoon of baking soda.

Drain the soaked chickpeas and dry them with a clean kitchen towel and paper towel.

Chop fresh dill, parsley (including stems), and cilantro.

Chop one onion into smaller pieces for easier blending.

Add garlic, a pinch of kosher salt, a pinch of black pepper, 1 tablespoon coriander, 1 tablespoon cumin, and 1 teaspoon cayenne pepper to the mixture.

Pulse the mixture in a food processor until well combined but not too smooth, leaving some texture.

If needed, add 1 tablespoon of chickpea flour for binding and 1 teaspoon of baking powder for airiness.

Refrigerate the mixture for one hour.

After an hour, optionally mix in 2 tablespoons of sesame seeds.

Preheat the oven to 350°F.

Form the mixture into patties using about 2 tablespoons for each.

Brush the patties with extra virgin olive oil.

Bake in the oven for about 8-10 minutes, turning halfway through and brushing with more olive oil if desired.
