Prepare six dessert cups that hold about 1/2 cup (120 mL) each.

Sprinkle 1 envelope (1/4 oz or 7 g) of unflavored gelatin over 1/4 cup (60 mL) of cold milk to soften it. Let it bloom for 5 to 10 minutes.

In a medium saucepan, combine 2 1/4 cups (560 mL) of heavy cream and 1/2 cup (60 g) of confectioner sugar.

Heat the cream mixture on medium to medium-high heat until it is hot but not boiling, stirring occasionally.

Once hot, add the bloomed gelatin to the cream mixture and stir until the gelatin is completely dissolved. If it doesn't dissolve fully, return it to low heat until it does.

Add 1/2 teaspoon of vanilla extract or vanilla bean paste to the mixture and stir to combine.

Pour the mixture into a measuring cup for easier pouring, then evenly divide it among the prepared dessert cups.
