Ingredients

  • 1 cup semolina (suji)
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 2 cups water
  • 1/2 cup milk
  • 1/4 cup chopped nuts (cashews, almonds)
  • 1/4 cup raisins
  • 1/2 tsp cardamom powder
  • 1/4 tsp salt

Instructions

  1. 1In a pan, heat the ghee over medium heat.
  2. 2Add the semolina and roast it until it turns golden brown, stirring continuously to avoid burning.
  3. 3In a separate pot, bring the water and milk to a boil.
  4. 4Once the semolina is roasted, carefully pour the boiling water and milk mixture into the pan, stirring continuously to prevent lumps.
  5. 5Add the sugar, cardamom powder, and salt to the mixture, stirring until the sugar dissolves completely.
  6. 6Add the chopped nuts and raisins, mixing well to combine.
  7. 7Cook the mixture on low heat until it thickens and starts to leave the sides of the pan, about 5-7 minutes.
  8. 8Grease a cake pan with ghee and pour the halva mixture into the pan, spreading it evenly.
  9. 9Allow it to cool for a few minutes, then cut into pieces or slices.
  10. 10Serve warm or at room temperature.

Rava Kesari is a popular South Indian dessert made from semolina, often served during festivals and special occasions.

  4. 4In a separate pot, bring water and milk to a boil.
  5. 5Once the semolina is roasted, slowly add the boiling water and milk mixture to the pan, stirring continuously to avoid lumps.
  6. 6Add sugar, saffron strands, cardamom powder, and salt to the mixture. Stir well until the sugar dissolves.
  7. 7Cook on low heat, stirring occasionally, until the mixture thickens and starts to leave the sides of the pan.
  8. 8Add the fried cashews and raisins back into the mixture, and mix well.
  9. 9Remove from heat and let it cool slightly before serving.
