Fried fish is a beloved dish in Grenada, often enjoyed during festive occasions and family gatherings. The dish showcases the island's abundant seafood and is typically seasoned with local spices, reflecting the vibrant Caribbean flavors. Today, variations exist across the Caribbean, with each island adding its unique twist to this classic preparation.
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Take fish and place it in a sieve for 10-15 minutes to let moisture accumulate at the bottom.
Roll the fish in a tea towel and squeeze out as much liquid as possible.
Place the fish on a clean, dry tea towel.
Put the fish pieces on a paper towel to absorb any remaining moisture until the skin loses its shine.
Season the fish with salt and pepper, tossing to coat evenly.
Dip each piece of fish in all-purpose flour, ensuring every side is covered.
In a bowl, mix all-purpose flour, corn starch, baking powder, baking soda, salt, and cayenne pepper until no clumps remain.
Gradually add water to the dry ingredients, mixing until a dough forms that lifts from the whisk in chunks.
Continue adding water until the batter becomes smooth and forms a continuous ribbon when lifted with a whisk.
Add vinegar to the batter and mix until bubbles form on the surface.
Dip the flour-covered fish in the batter, ensuring not to over-coat it.
Coat the battered fish in flour again until ripples form on the surface.
Heat oil to around 350°F and place the fish in the oil, ensuring light bubbling occurs around it.
Baste the fish continuously with oil while frying until it reaches a golden color.
Remove the fish from the oil and place it on a paper towel to drain excess oil.
For tartar sauce, combine half a cup of mayonnaise with gherkins, capers, lemon juice, garlic powder, onion powder, and salt in a bowl.
Mix the tartar sauce with a whisk or blend in a food processor until smooth.
Plate the fried fish and serve with tartar sauce.
