2 cups peas
2 cups water
2 cloves garlic, minced
1 can (13.5 oz) coconut milk
1/2 tsp thyme
1 tbsp ginger, grated
1 Scotch bonnet pepper (whole, optional)
to taste marination
1 tsp garlic powder
1/2 tsp allspice
1/2 tsp salt
2 bay leaves
1/4 cup coconut powder
2 cups long-grain rice
2 tablespoons avocado oil

Wash the peas nice and clean.

Add about half a pot of water to cover the peas with a few garlic cloves.

Cover and allow to cook for at least 30 to 45 minutes.

Wash and blend the coconut and set aside until the peas are fully cooked.

Once the peas are cooked, add coconut milk, thyme, ginger, hot pepper, and marination for extra flavor.

Stir the mixture.

Add garlic powder, allspice, salt, bay leaves, and more coconut powder to taste.

Wash the rice and add it to the peas.

Add avocado oil.

Cover and allow to steam for 30 to 45 minutes.
