Open 1 can of red kidney beans and do not discard the liquid.

Add the kidney beans with the liquid to a pot.

Pour in about 2 to 3 cups of water and add some chopped garlic.

Cover the pot and bring to a boil for about 5 minutes.

After 5 minutes, add 1 can of coconut milk to the pot.

Flavor the mixture with fresh scallion, thyme, scotch bonnet pepper, a bit of salt, and jerk seasoning.

After 5 minutes, add 3 cups of parboiled rice to the pot and mix well.

Allow the mixture to come to a boil, then cover it with the lid and reduce the heat to the lowest setting to steam for about 15 to 20 minutes.
